We love steel cut oats ($2.99 @ Trader Joe's--aka Irish Oats) but we don't love how long they take to cook (about 30 minutes). Solution? Simple.
- The night before you plan to eat those oats, get a mason jar out and add 1 c. steel cut oats.
- Add 2 c. room temperature water (filtered please!) and 1-2 TBS. whey (that stuff I told you about last post), lemon juice, buttermilk or even white vinegar.
- Cover the jar and put in a warm spot overnight.
- The next morning, dump jar contents into pan, add 1 c. water, bring to a boil then turn down heat and simmer for 3-4 minutes.
- Add milk (or cream if you have it), a little honey or maple syrup and here you go...a hearty, stick to your ribs breakfast in no time.
