Blackberry Crumble



  • 4 cups blackberries (fresh or defrosted)

  • 1 TBS. flour

  • 1 TBS. lemon juice

  • 2/3 cup whole wheat flour

  • 1/2 cup Rapadura

  • 1/2 cup rolled oats

  • 1 teaspoon cinnamon

  • 41/2 TBS. butter

  1. Preheat oven to 375 degrees.

  2. Put berries in a mixing bowl and add lemon juice and one tablespoon flour. Combine, and pour into a 10” pie plate.

  3. In a food processor, pulse together the remaining ingredients until they resemble coarse breadcrumbs (sometimes it looks a little dry but no worries). Cover the berries with the topping and bake for 30 minutes until the top has browned and the fruit is bubbling. Let cool 10 minutes or you'll burn that tongue of yours.

Can be served hot or at room temperature. Goes great with vanilla ice cream or freshly whipped cream.
