Fish Food

Ahhhh...fish tacos with black bean mango salsa. I could eat these every day. Here's how you can make your own:

Pick up some of these at Mother's or Trader Joe's :



Pick a mild flavored fish (we like orange roughy), grill it, bake it or pan fry it:



Then top with some Black Bean Mango Salsa (recipe below)



And some guac if you want


BLACK BEAN-MANGO SALSA

3 c. black beans
1 1/2 cups fresh or frozen and defrosted corn
2-3 cloves garlic, crushed
3 tomatoes, diced (can also use 2 c. of chopped cherry tomatoes)
1-1 ½ c. diced mango (I use frozen)
1 small can diced green chiles (optional)
1/2 bunch cilantro, chopped
1/2 red onion, finely diced
Lime juice (2 limes)

Put the corn in a non-stick pan with the garlic and cooked until just starting to brown. Add to all other ingredients.
